To match an israeli wine

Description

Bought a bottle of Israeli wine (Hermon, red) and had to find something to match it with. This was the result. 

Beef Filet. Roasted the meat in a pan with butter and then rolled it in a spice mix consisting of approximately equal parts of salt, sesame seeds, thyme, parsley and garlic powder. In with the thermometer and then roasting the meat in the oven to an inner temperature of 60 degrees (C, not F).

Roasted root vegetables. Potatoes, parsnips, carrots. Sprayed with oil, seasoned with dried parsley, garlic powder and salt.

Charoset. The recipe I followed gave a jar that had stretched into an eight-person meal type.

1 apple, peeled and cored.
1 pear, peeled and cored.
1 cup (1.4 dl) walnuts
½ cup (0.7 dl) raisins
½ cup (0.7 dl), sweet wine (used port)
1/2 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg

Run all together in a food processor to a reasonably smooth mix.

Ajvar. Turkish rather than Israeli, but both peppers and garlic are used extensively throughout the Middle East and it works extremely well in pair with charoset.

I thought this was very good and the wine, which is soft and berry (black cherry and currant) was excellent with it.
